Mini Thai Cauliflower Pizzas
Ingredients
- 1 head cauliflower, riced [cite: 201, 202]
- Flax egg (1 TBSP flax meal + 4 TBSP water) [cite: 205]
- 3 TBSP vegan parmesan cheese [cite: 206]
- 1 TBSP Arrowroot starch [cite: 208]
- 3 cloves minced garlic [cite: 207]
- 1 tsp salt, 1 tsp oregano, 1 tsp dried basil [cite: 206, 207]
- Peanut sauce (peanut butter, tamari, sriracha, fake sugar, ginger) [cite: 210]

Steps
- Boil riced cauliflower for 5 minutes, drain, and let cool. [cite: 201, 202, 203]
- Wring out all excess liquid from the cauliflower using a clean dish towel. [cite: 204, 205]
- Combine cauliflower with the flax egg, vegan parmesan, starch, garlic, and herbs. [cite: 206, 207, 208]
- Form into 1/2-inch thick discs, pan fry, and drain. [cite: 209]

Thai Kelp Noodles
Ingredients

- 1/2 cup peanut butter [cite: 213]
- 3 tablespoons Swerve sweetener [cite: 213]
- Bell peppers, spinach, and red pepper [cite: 211, 214, 215]
- Garlic, cilantro, and red pepper flakes [cite: 214, 216]
- 2 tablespoons extra-virgin olive oil [cite: 213]
Steps
- Sauté bell peppers and spinach; set aside. [cite: 211, 212]
- Blend coconut milk, peanut butter, Swerve, olive oil, garlic, red pepper, and spices to make the sauce. [cite: 212, 213, 214, 215]
