Taco Bell Mexican Pizzas & Crunchwraps

We recreate Taco Bell’s Mexican Pizza and bring the Choco Taco back to life. Greg and Beth wrote on HBO’s Crashing together and are one of my favorite pairings. Stay ‘til the end for a fun surprise!

Mexican Pizza & Crunchwraps

Ingredients

  • Ground beef with packaged taco seasoning [cite: 341]
  • Canned refried beans [cite: 341]
  • 8-inch flour tortillas [cite: 341]
  • Enchilada sauce [cite: 341]
  • Mexican blend cheese [cite: 341]
  • Diced tomatoes and chopped onions [cite: 341]
  • Nacho cheese mixture [cite: 341]
  • Vegetable oil for frying [cite: 341]

Steps

  1. Brown the ground beef with taco seasoning and prepare the refried beans[cite: 341].
  2. Fry the tortillas in vegetable oil for 30-45 seconds until crisp, then drain on paper towels[cite: 341].
  3. For Pizzas: Spread refried beans on one crisp shell, top with a second shell, and spread with enchilada sauce[cite: 341].
  4. Top with cheese, diced tomatoes, and onions, then bake until the cheese is melted[cite: 341].
  5. For Crunchwraps: Layer beef, nacho cheese, and a crisp tostada shell inside a large flour tortilla[cite: 341].
  6. Fold the edges inward and grill in a skillet seam-side down for about 2 minutes until golden[cite: 342].

Choco Tacos

Ingredients

  • 2 whole eggs plus 2 egg whites [cite: 339]
  • 1/2 cup superfine sugar [cite: 339]
  • 1/2 cup all-purpose flour [cite: 339]
  • 1/2 cup melted unsalted butter [cite: 339]
  • Vanilla extract and a pinch of salt [cite: 339]
  • Ice cream, chocolate chips, and chopped peanuts [cite: 341, 342]

Steps

  1. Whisk egg mixture, sugar, flour, butter, and vanilla until smooth[cite: 339].
  2. Cook 3-4 tablespoons of batter in a pizzelle maker until golden brown[cite: 339, 340].
  3. Immediately fold the warm disc over a wooden spoon to form a taco shape and let cool[cite: 340].
  4. Fill the cooled shells with ice cream and freeze until firm[cite: 341].
  5. Dip the edges in melted chocolate and peanuts before serving[cite: 342].
