Eggnog & Soyrizo Latke Waffles

It’s a jolly holiday with Gareth Reynolds and Sam Tripoli as we drink eggnog and make soyrizo latke waffles in this festive season one throwback.

Eggnog

Ingredients

  • 6 Eggs (yolks separated from whites)
  • 1/2 cup Sugar
  • 1 cup Heavy cream
  • 2 cups Milk
  • 1/2 tsp Ground nutmeg
  • 1/2 tsp Vanilla
  • Pinch of salt
  • Whiskey (optional)

Steps

  1. Separate 6 eggs yolk from whites. Then whisk yolks with sugar.
  2. In saucepan over medium-high heat combine heavy cream, milk, nutmeg and salt.
  3. Once simmering, temper eggs until fully combined, then put back into pot and continue whisking and cooking until barely thickened.
  4. Take off heat and add vanilla. Pour into pitcher and chill before serving. Optional to serve with whiskey.

Soyrizo Latke Waffles

Ingredients

  • 3 potatoes, peeled and grated
  • 2 eggs
  • Soyrizo
  • White onion
  • EVOO
  • Sour Cream
  • Applesauce
  • Salt and pepper to taste

Steps

  1. Peel and grate potatoes, then drain out remaining moisture with cheese cloth. Mix potatoes with eggs.
  2. Add salt and pepper to taste, then set aside.
  3. Dice full onion then cook with soyrizo in oil. Once cooked, mix in with potatoes.
  4. Add mixture to a waffle iron and cook until golden brown.
  5. Serve with fried egg on top and sour cream or apple sauce.
