Homemade McGriddles & Hashbrowns
The Super Troopers — Steve Lemme and Kevin Heffernan — come by the kitchen to give Bert his flowers for helping on the movie, and lend a hand making homemade McGriddles: maple-crystal-studded pancake buns stacked with sausage and egg, plus crispy baked hashbrowns on the side.
Maple Syrup Crystals
Ingredients
- 1 cup maple syrup
Steps
- Heat the syrup over medium heat, stirring, until thick, then pour onto a chilled plate for the syrup to crystallize.
Hashbrowns
Ingredients
- Potatoes
- Olive oil
- Kosher salt
- Black pepper
- ½ tsp paprika
- 1 egg, beaten
- 2 tbsp flour
Steps
- Preheat the oven to 350°F.
- Rub the potatoes with oil and salt, then bake for 45 minutes.
- Shred the cooked potatoes with a box grater and add salt, pepper, paprika, and 1 beaten egg.
- Add 2 tbsp flour, stirring together, then form into ½-inch-thick patties.
- Pan-fry the patties, then let them dry on paper towels.
Pancake Buns & Assembly
Ingredients
- 1 cup flour (plus 2 tbsp for the hashbrowns)
- 2 tbsp sugar
- 2 tsp baking powder
- ½ tsp kosher salt
- 1 cup milk
- 2 tbsp melted butter
- 1 egg
- Ground sausage
- Eggs, for serving
Steps
- Whisk together 1 cup flour, the sugar, baking powder, and ½ tsp salt.
- In a separate bowl, whisk the milk, melted butter, and 1 egg.
- Add the dry ingredients to the milk mixture and whisk until just combined.
- Crumble the maple syrup crystals into pieces.
- Cook the buns in molds: fill halfway with batter, add syrup crystals, then top with more batter.
- Form the sausage into patties and fry in a skillet.
- Cook eggs any way you like.
- Stack the pancake buns with a sausage patty and egg to assemble each McGriddle.
