Bacon Peanut Brittle with Rum Runners (and Homemade Butter)

A couple of clean comics swing by the kitchen for candy and cocktails. Bert, Brian Regan, and Tom Papa make flaming rum runners and a batch of bacon peanut brittle — and even shake up some homemade butter — while chatting about baking bread, cooking shows, and the artisanal hobbies they'd take up if they ever quit comedy.

Rum Runners

Ingredients

  • 1 oz light rum
  • 1 oz dark rum
  • 1 oz banana liqueur
  • 1 oz blackberry liqueur
  • 1 oz orange juice
  • 1 oz pineapple juice
  • A splash of grenadine
  • Extra rum, to float and flame
  • Orange slice, to garnish

Steps

  1. Combine 1 ounce of each ingredient (both rums, banana liqueur, blackberry liqueur, orange juice, pineapple juice) in a cocktail shaker with ice, plus a splash of grenadine.
  2. Strain into a glass over fresh ice.
  3. Float a little rum on top and light it on fire.
  4. Garnish with an orange slice.

Bacon Peanut Brittle

Ingredients

  • Bacon slices
  • Sugar
  • Corn syrup
  • Water
  • Butter
  • Peanuts
  • Salt
  • Vanilla extract
  • Baking soda

Steps

  1. Butter a foil-lined baking sheet.
  2. Cook the bacon slices until crisp; drain and split in half.
  3. Combine the sugar, corn syrup, and water in a saucepan.
  4. Cook over medium-high heat until it reaches 260°F.
  5. Remove from heat and add the butter, peanuts, and salt.
  6. Stir and continue cooking over medium-high heat until the syrup turns golden brown and reaches 285°F.
  7. Stir in the bacon, vanilla extract, and baking soda; cook until the foam subsides and darkens slightly.
  8. Pour onto the lined baking sheet and spread into a thin layer.
  9. Let cool, then break into pieces.

Homemade Butter

Ingredients

  • Heavy cream
  • Salt

Steps

  1. Fill a jar with heavy cream and screw on the lid.
  2. Shake for 5-7 minutes until a lump forms.
  3. Separate out the buttermilk.
  4. Rinse the butter ball in water until the water runs clear.
  5. Mix in salt.
