Jerk Chicken Sandwich

LIVE! With Ja Rule and Ana Navarro | Something’s Burning | S6 E24

During South Beach Wine & Food Festival, I did a LIVE Something’s Burning for an audience of 10’s with Ja Rule and Ana Navarro. We talked about Ja’s music, Challah bread, and maybe a little politics. Jerk chicken sandwiches were made, music was played, and the audience stuck around, so I call that a success!

Jerk Chicken

Ingredients

  • 3 chicken breasts
  • 2 TBS Jerk Seasoning paste
  • 1 TBS Old Bay
  • 1 tsp Garlic Powder
  • 1 tsp dried thyme
  • 1/4 tsp allspice
  • Salt and Pepper
  • 1 TBS olive oil
  • Grapeseed oil for greasing grill pans

Steps

  1. Cut chicken breasts in half and place them flat in Ziplock bags.
  2. Use the flat side of a meat mallet to pound the chicken breast halves to about 1/4 to 1/2 inch thick in the bag.
  3. Place chicken in a glass bowl and add olive oil, jerk seasoning paste, old bay, garlic powder, dried thyme, allspice, salt, and pepper.
  4. Use hands to rub the marinade all over the chicken.
  5. Place two grill pans over medium heat and grease with a little bit of grapeseed oil.
  6. Place chicken on grill pans and grill for 3 minutes per side until lightly browned; transfer to a sheet tray.

Coleslaw and Assembly

Ingredients

  • 2 cups premade tricolor coleslaw mix
  • 6 TBS mayonnaise
  • 1 tsp or a squeeze of lemon
  • 15-20 cilantro leaves (optional)
  • Salt and Pepper
  • 3 pineapple rings, fresh or canned, drained
  • 3 brioche burger buns
  • 3 TBS softened salted butter
  • Pickled red onion, drained

Steps

  1. To make the coleslaw, place coleslaw mix, mayonnaise, lemon, cilantro, salt, and pepper into a glass bowl then mix with tongs.
  2. Spread butter on both sides of the burger buns and toast on the grill pans for 30 seconds.
  3. Build sandwiches by placing chicken on the bun base, followed by pickled red onion, one pineapple ring, and coleslaw.
  4. Top with the burger bun top and serve.
