Jerk Chicken Sandwich

During South Beach Wine & Food Festival, I did a LIVE Something’s Burning for an audience of 10’s with Ja Rule and Ana Navarro. We talked about Ja’s music, Challah bread, and maybe a little politics. Jerk chicken sandwiches were made, music was played, and the audience stuck around, so I call that a success!
Jerk Chicken
Ingredients
- 3 chicken breasts
- 2 TBS Jerk Seasoning paste
- 1 TBS Old Bay
- 1 tsp Garlic Powder
- 1 tsp dried thyme
- 1/4 tsp allspice
- Salt and Pepper
- 1 TBS olive oil
- Grapeseed oil for greasing grill pans
Steps
- Cut chicken breasts in half and place them flat in Ziplock bags.
- Use the flat side of a meat mallet to pound the chicken breast halves to about 1/4 to 1/2 inch thick in the bag.
- Place chicken in a glass bowl and add olive oil, jerk seasoning paste, old bay, garlic powder, dried thyme, allspice, salt, and pepper.
- Use hands to rub the marinade all over the chicken.
- Place two grill pans over medium heat and grease with a little bit of grapeseed oil.
- Place chicken on grill pans and grill for 3 minutes per side until lightly browned; transfer to a sheet tray.
Coleslaw and Assembly
Ingredients
- 2 cups premade tricolor coleslaw mix
- 6 TBS mayonnaise
- 1 tsp or a squeeze of lemon
- 15-20 cilantro leaves (optional)
- Salt and Pepper
- 3 pineapple rings, fresh or canned, drained
- 3 brioche burger buns
- 3 TBS softened salted butter
- Pickled red onion, drained
Steps
- To make the coleslaw, place coleslaw mix, mayonnaise, lemon, cilantro, salt, and pepper into a glass bowl then mix with tongs.
- Spread butter on both sides of the burger buns and toast on the grill pans for 30 seconds.
- Build sandwiches by placing chicken on the bun base, followed by pickled red onion, one pineapple ring, and coleslaw.
- Top with the burger bun top and serve.
